The Town Council quickly and enthusiastically approved the application for a victualing license for Basil & Bunny, a food truck that serves creative plant-based foods and is now putting the finishing touches on a permanent location at Unity Park.

“We are 100% plant based comfort food,” said applicant Mathiew Medeiros at the Wednesday, July 13 meeting. “We started out of Hope & Main in Warren a couple of years ago, just before the pandemic, with a food truck. Now we are scaling our business and expanding with a brick and mortar right here in Bristol, as part of Unity Park.”

Basil & Bunny specializes in burgers, fries, and crispy “chicken”. In its incarnation as a food truck it was parked outside Pivotal on several weekends, so it already has a following among Unity Park regulars.

“It sounds excellent,” said Councilor Tim Sweeney. “I know you have a lot of choices and towns you could go to and you picked us and we're glad to have you.

Councilor Mary Parella agreed. “I’m so happy to see all the graduates coming out of Hope & Main moving up to Unity Park,” she said.

“You’re definitely joining a good group over there…best of luck,” said Councilor Tony Teixeira.

Medeiros said that he was targeting early August for a grand opening timeframe.
