Bristol's Foglia named one of nation's best new vegetarian restaurants

It’s only been open for about 10 weeks, but Foglia, Chef Pete Carvelli’s fine dining vegan restaurant at 31 State St. is getting attention of the best kind.

As one of the best new restaurants of 2022, according to an annual list compiled by Vegetarian Times magazine, Foglia is one of only 11 new plant-based restaurants so honored. Other than one located in Healdsburg, Calif., in the heart of Sonoma wine country, the other notable establishments are located in urban centers with competitive culinary cultures, including New York, Los Angeles, Washington, D.C., and Philadelphia.

Carvelli’s not even sure how the magazine heard about Foglia, so when he received the news from Brittany Martin, Vegetarian Times’ editor, he was truly surprised.

“I thought she was putting a little story up on the website,” he said. “Then a week later she told me we were getting this. I was blown away.”

He doesn’t know who from Vegetarian Times came through, when or what they ordered. “It couldn’t have been that long ago,” he said.

Carvelli is quick to point out that it’s a team award. “It’s about everybody, from the front of the house to the kitchen,” he said. “I am just thrilled.”
“It’s very humbling, and amazing to be included on a list with such great restaurants.”

Foglia is open Thursday, Friday, and Saturday nights from 5 to 9 p.m., and Saturday brunch from 10 a.m. to 3 p.m. For more information, visit fogliabristol.com.
